
Ingredients:
- 1 cup brown rice (cooked)
- 1 cup broccoli florets
- ½ cup carrots (sliced)
- ½ cup bell peppers (any color)
- ½ cup mushrooms (optional)
- 1 tbsp olive oil
- 1 tbsp low-sodium soy sauce
- 1 tsp garlic (minced)
Method:
- Heat olive oil in a pan and sauté garlic.
- Add all vegetables and stir-fry for 5–7 minutes.
- Add soy sauce and mix well.
- Serve hot with brown rice.
