
Ingredients:
- 1 cup cooked quinoa
- 1 chicken breast (grilled or pan-seared)
- 1 cup baby spinach
- ½ cup cherry tomatoes (halved)
- ¼ cup cucumber (chopped)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper to taste
Method:
- Grill the chicken breast until golden brown on both sides.
- In a large bowl, mix quinoa, spinach, cherry tomatoes, and cucumber.
- Slice the chicken and place it over the salad.
- Drizzle olive oil and lemon juice, then season with salt and pepper.
