Grilled Chicken & Quinoa Bowl for weight loss

Ingredients:

  • 1 cup cooked quinoa
  • 1 chicken breast (grilled or pan-seared)
  • 1 cup baby spinach
  • ½ cup cherry tomatoes (halved)
  • ¼ cup cucumber (chopped)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt & pepper to taste

Method:

  1. Grill the chicken breast until golden brown on both sides.
  2. In a large bowl, mix quinoa, spinach, cherry tomatoes, and cucumber.
  3. Slice the chicken and place it over the salad.
  4. Drizzle olive oil and lemon juice, then season with salt and pepper.
